Creamy vegetable soup
My go-to creamy veggie soup

Key Ingredients:
Potatoes - Potatoes for the creamy texture
Pumpkin - I´ve tried to make this soup with many different kinds of veggies, but it always turns exeptionally good when I make it with pumpkin
Herbs - I always try to use fresh herbs in my cooking
Ginger powder - works well with the sweetnes of pumpkin, I always use the in combination
Cream - double cream or coconut cream, both fantastic
Recipe
I normally just use any veggies that I find in the fridge, but I there are some that I always use: potatoes, pumpkin, onion and garlic.
Cut veggies into small pieces. I keep the veggies and potatoes separately, because I don´t usually fry potatoes, I add them later.
Fry onion in olive oil and add the veggies.
Press and add garlic. Then fry for a little bit.
Then add potatoes.
Add vegetable broth or water and stock cube.
Blend it.
Add cream.
Blend again to create foamy texture.
Desired texture.
Serve. It was very tasty with smoked salmon and dill.
